Operator checklist
Before opening, record starting cash and the event window. If your POS supports cash drawer sessions, start one before the line opens.
During service, ring every sale through the POS, including cash, so the tender split is not guesswork at close.
At close, count actual cash and record paid-in/paid-out adjustments separately from sales. Compare actual cash to expected cash from the POS cash drawer session.
Record POS totals for gross sales, cash sales, card sales, tips, refunds, discounts, and fees for the exact event window.
Record processor-side information separately: current card gross, known processing fees, pending/offline payments, and the payout or transfer batch that should eventually hit the bank.
Do not force a same-day payout match when the processor batches multiple days or delays offline payments. Instead, write the expected follow-up: payout ID, transfer date, or pending offline upload.
